Kawakawa ( Maori Bush Basil) was traditionally taken either internally or externally for its anti-oxidant properties. Kawakawa can be used as a tonic, or rub on meat, veges, fish, or add to sauces and marinades. It is similar to basil with a sweet, lemon grass flavour. The flavour combines well with sugar based dishes as well as chicken, steamed vegetables and tomatoes.

The leaves have a hot, peppery taste when chewed, and it is similar to a pepper, wih a savoury, citrusy flavour. You can use Horopito as a seasoning, as an infusion for olive oil, a rub for meat, fish and vegetables, or add to sauces and marinades. It is great with wild game, red meat, seafood and salads.
